3 large zucchinis, trimmed
7.5 ounce-tub of onion chive-flavored, reduced fat, spreadable cream cheese
½ cup torn fresh basil
4-ounce jar of drained, diced, sun dried tomatoes
1/3 cup grated parmesan cheese
1 clove grated garlic
1 ½ teaspoons Italian seasoning
1 tsp ground pepper
- Using a vegetable peeler, slice zucchini into very thin strips that run the full length and width of the zucchini.
- After slicing about five strips, flip the zucchini over and slice another five strips from the other side. This will ensure more uniform strips.
- Combine cream cheese, basil, sun dried tomatoes, parmesan, garlic, Italian seasoning, and pepper in a medium bowl. Spread 2 teaspoons of the mixture over each zucchini strip. Roll up the strips and secure with tooth picks if needed.
