Yield: 12 servings
2 cups cauliflower buds, chopped
2 cups broccoli florets, chopped
4 kale leaves, shredded
1 cup carrots, shredded
1 cucumber, diced
½ cup green pepper, diced
4 green onions, chopped
3 tablespoons olive oil
1/3 cup apple cider vinegar
6 teaspoons honey
Pinch of salt
Ground black pepper to taste
- Combine all fresh vegetables in a large bowl and set aside.
- In a small bowl, combine oil, vinegar, salt, pepper, and honey.
- Pour the contents of the small bowl over the fresh vegetables.
- Mix well and refrigerate overnight.
