These cherry pecan chocolate muffins are sure to be a hit at all of your Valentine’s Day events.
Yield: 12 muffins
Ingredients
1 cup whole wheat flour
1 cup wheat bran
¼ cup brown sugar
2 teaspoons baking powder
½ teaspoon salt
2 eggs
1 cup applesauce
2 teaspoons cinnamon
¼ cup vegetable oil
1/3 cup 2% milk
1 cup chocolate chips
½ cup dried cherries
½ cup chopped pecans
Directions
- Combine all the dry ingredients in a large bowl.
- In a separate bowl, combine all the wet ingredients.
- Mix the wet ingredients into the dry ingredients and stir just until moist.
- Fill 12 muffin cups three-fourths full and put a sprinkle of ground cinnamon on top.
- Bake for 16-20 minutes in a 400-degree F oven.
