This Greek-inspired couscous will quickly become a weekday dinner staple in your house.
Yield: 6 servings
Ingredients
1 cup couscous
1 cup vegetable broth
¼ teaspoon salt
½ teaspoon ground pepper
Juice of half a lemon
2 tablespoons olive oil
1 tablespoon ground oregano
1 cup diced tomato
1 diced English cucumber
1 medium diced red onion
½ cup chopped fresh parsley
2 teaspoons minced garlic
1/3 cup low fat feta cheese
Directions
- Place the couscous in a medium microwave safe bowl, and add the broth, salt, and pepper and stir to combine.
- Place in the microwave and cook on high for 2 minutes.
- Remove the couscous, cover the bowl with plastic wrap or foil, and set aside for five minutes or until slightly cooled.
- Fluff the couscous with a fork to separate the grains.
- Stir in the rest of the ingredients, adjust seasonings as desired.
This can be served warm or placed in the refrigerator to serve cold. For the best flavor, eat warm right after preparing.
