Ingredients
Chicken:
3 tablespoons olive oil
1 small red onion, finely diced
1 pound ground chicken
4 cloves of garlic, minced
2 teaspoons ginger, grated
4 tablespoons soy sauce
1 teaspoon sesame oil
Yogurt dressing:
1 cup plain Greek yogurt
2 cloves garlic
2 tablespoons lime juice
4 scallions
¼ cup mint
½ teaspoon black pepper
½ teaspoon salt
Wrap and toppings:
12 Boston Bibb/butter lettuce leaves, cleaned and separated
1 cup carrots, shredded
1 avocado, pitted, peeled, and cubed
½ mango, thinly sliced
½ radish, thinly sliced
3 tablespoons crushed peanuts
Cilantro leaves
Instructions
- Place a large skillet over medium-high heat. Add oil and sauté onion until translucent. Add chicken, garlic, and ginger and cook until chicken is mostly cooked through. Add soy sauce and cook until chicken is cooked through. Turn off heat and add sesame oil.
- In a food processor, add yogurt, garlic, lime juice, scallions, mint, black pepper, and salt. Blend until well incorporated.
- Lay out lettuce leaf and assemble by adding a spoonful of chicken, carrots, mango, avocado, peanuts, and cilantro. Top with yogurt dressing and enjoy.
