Yield: 12 servings
Ingredients
4 tablespoons butter
1/3 cup brown sugar
2 eggs, beaten
1 teaspoon vanilla
1/4 cup evaporated non-fat milk
Zest of an orange
3 cups whole wheat flour
1 tablespoon baking powder
1/8 teaspoon salt
1¼ cups blueberries
Directions
1. Cream the butter for 3 minutes with electric mixer
2. Slowly add the sugar and mix for 2 more minutes
3. Add the eggs one at a time
4. Add the vanilla, evaporated milk, and orange zest
5. Sift together the flour, baking powder, and salt.
6. Gently stir in blueberries
7. Turn dough onto parchment paper-lined baking sheet
8. Form dough into a large circle and into 12 equal wedges or biscuits
9. Separate the wedges/biscuits, allowing 1/2-inch spaces between each one
10. Bake at 375 degrees for 20-25 minutes until tops are light brown.
